The audience will sample chocolate made from a Dominican chocolate tasting project spearheaded by Zorzal Cacao (cacao grower) and Dandelion Chocolate (bean-to-bar chocolate maker). The presenters will give an overview of their direct trade relationship and discuss how they are working together to plant cacao varietals, on a 1,019 acre Reserve in the Dominican Republic, with specific flavor profiles. This is a unique opportunity to hear about advantages and challenges, from both cacao grower and chocolate maker, of a tree-to-bar partnership.
